Chateaubriand is a classic French dish made from a thick cut of beef tenderloin, typically served with a rich sauce and accompanied by vegetables.
Ingredients - Serves 2
- Dijon mustard - 1 tablespoon
- Heavy cream - 1/4 cup
- Fresh thyme - 1 sprig
- Beef broth - 1/2 cup
- Red wine - 1/2 cup
- Garlic - 2 cloves, minced
- Shallots - 2, finely chopped
- Butter - 2 tablespoons
- Black pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Olive oil - 2 tablespoons
- Beef tenderloin - 2 (8-ounce) filet mignon steaks
Let's Get Started
- Preheat the oven to 400°F (200°C).
- Season the beef tenderloin steaks with salt and black pepper on both sides.
- Heat olive oil in an oven-safe skillet over high heat.
- Sear the steaks for 2-3 minutes on each side until browned.
- Transfer the skillet to the preheated oven and cook for about 10-12 minutes for medium-rare doneness.
- Remove the steaks from the skillet and let them rest for a few minutes.
- In the same skillet, melt butter over medium heat.
- Add shallots and garlic, sauté until softened.
- Pour in red wine and beef broth, and add fresh thyme. Simmer until the liquid reduces by half.
- Stir in heavy cream and Dijon mustard, and cook for another 2-3 minutes until the sauce thickens.
- Slice the rested steaks and serve with the sauce.
