Charro Beans
Charro Beans, also known as Frijoles Charros or Cowboy Beans, is a traditional Mexican dish. It's a hearty, pinto bean soup with bacon and a variety of flavorful ingredients.
Ingredients - Serves 6
- Water - 8 cups
- Salt - To taste
- Cilantro - 1/4 cup, chopped
- Jalapeno peppers - 2, seeded and chopped
- Tomatoes - 2, diced
- Onion - 1 large, chopped
- Garlic - 4 cloves, minced
- Bacon - 4 slices, chopped
- Pinto beans - 1 pound, dried
Let's Get Started
- Rinse the pinto beans and soak them overnight in a large bowl of water.
- In a large pot, cook the bacon over medium heat until it's crispy.
- Add the garlic, onion, tomatoes, and jalapenos to the pot and cook until the vegetables are soft.
- Drain the beans and add them to the pot. Add the water and bring the mixture to a boil.
- Reduce the heat to low, cover the pot, and let it simmer for about 2 hours, or until the beans are tender.
- Add the cilantro and salt to the pot and stir well.
- Serve the Charro Beans hot, with tortillas or rice if desired.
