Charred Spanish Octopus
This recipe brings out the rich, sweet flavor of the octopus, while the char adds a smoky touch. It's a Spanish delicacy that's surprisingly easy to make at home.
Ingredients - Serves 4
- Fresh parsley - 1/4 cup, chopped
- Black pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Paprika - 1 teaspoon
- Lemon - 1, juiced
- Garlic - 4 cloves, minced
- Olive oil - 1/4 cup
- Octopus - 1 whole (about 2-3 lbs)
Let's Get Started
- Clean the octopus, removing the beak and eyes, and rinse well under cold water.
- Place the octopus in a large pot and cover with water. Bring to a boil, then reduce the heat and simmer for about an hour, or until the octopus is tender.
- Remove the octopus from the pot and let it cool.
- Once cool, cut the octopus into large pieces.
- In a large bowl, combine the olive oil, minced garlic, lemon juice, paprika, salt, and pepper.
- Add the octopus pieces to the bowl and toss to coat.
- Heat a grill or grill pan over high heat.
- Place the octopus pieces on the grill and cook for about 2-3 minutes on each side, until charred.
- Remove from the grill and sprinkle with fresh parsley before serving.
