Char Kway Teow
Char Kway Teow is a popular Malaysian stir-fried noodle dish made with flat rice noodles, shrimp, Chinese sausage, bean sprouts, and eggs.
Ingredients - Serves 2
- Lime wedges - For serving
- Green onions - 2 stalks, chopped
- Chili paste - 1 teaspoon (optional)
- Vegetable oil - 2 tablespoons
- Sugar - 1 teaspoon
- Fish sauce - 1 tablespoon
- Light soy sauce - 1 tablespoon
- Dark soy sauce - 2 tablespoons
- Garlic - 3 cloves, minced
- Eggs - 2
- Bean sprouts - 1 cup
- Chinese sausage - 2 links, sliced
- Shrimp - 150 grams, peeled and deveined
- Flat rice noodles - 200 grams
Let's Get Started
- Soak the flat rice noodles in hot water for 10 minutes, then drain and set aside.
- Heat the vegetable oil in a wok or large frying pan over medium-high heat.
- Add the minced garlic and stir-fry for 1 minute until fragrant.
- Add the shrimp and Chinese sausage, and stir-fry until the shrimp turns pink and the sausage is slightly caramelized.
- Push the ingredients to one side of the pan and crack the eggs into the empty space. Scramble the eggs until cooked.
- Add the drained rice noodles to the pan and stir-fry for 2-3 minutes until they are evenly coated in the sauce.
- Add the dark soy sauce, light soy sauce, fish sauce, sugar, and chili paste (if using). Stir-fry for another 2 minutes.
- Add the bean sprouts and chopped green onions, and stir-fry for an additional 1-2 minutes until the bean sprouts are slightly wilted.
- Remove from heat and serve hot with lime wedges on the side.
