Chao Long
Chao Long is a Vietnamese rice noodle soup made with pork intestines and various spices.
Ingredients - Serves 4
- Chili peppers - For garnish
- Bean sprouts - For garnish
- Fresh herbs (cilantro, thai basil) - For garnish
- Lime - 1, cut into wedges
- Lemongrass - 2 stalks, bruised
- Sugar - 1 tablespoon
- Fish sauce - 3 tablespoons
- Shallots - 2, thinly sliced
- Garlic - 4 cloves, minced
- Ginger - 2-inch piece, sliced
- Rice noodles - 200g
- Pork bones - 1 kg
- Pork intestines - 500g
Let's Get Started
- Clean the pork intestines thoroughly and cut into bite-sized pieces.
- In a large pot, add the pork bones, pork intestines, ginger, garlic, shallots, lemongrass, fish sauce, and sugar. Fill the pot with water until all ingredients are submerged.
- Bring the pot to a boil, then reduce the heat to low and simmer for 2 hours, skimming off any impurities that rise to the surface.
- While the broth is simmering, prepare the rice noodles according to package instructions.
- Once the broth is ready, strain it to remove the bones, ginger, garlic, shallots, and lemongrass.
- To serve, divide the cooked rice noodles among bowls. Ladle the hot broth over the noodles.
- Garnish with fresh herbs, bean sprouts, chili peppers, and a squeeze of lime juice.
- Serve hot and enjoy!
