Ingredients - Serves 4

Let's Get Started

  1. Clean the pork intestines thoroughly and cut into bite-sized pieces.
  2. In a large pot, add the pork bones, pork intestines, ginger, garlic, shallots, lemongrass, fish sauce, and sugar. Fill the pot with water until all ingredients are submerged.
  3. Bring the pot to a boil, then reduce the heat to low and simmer for 2 hours, skimming off any impurities that rise to the surface.
  4. While the broth is simmering, prepare the rice noodles according to package instructions.
  5. Once the broth is ready, strain it to remove the bones, ginger, garlic, shallots, and lemongrass.
  6. To serve, divide the cooked rice noodles among bowls. Ladle the hot broth over the noodles.
  7. Garnish with fresh herbs, bean sprouts, chili peppers, and a squeeze of lime juice.
  8. Serve hot and enjoy!
