Canh Chua
Canh Chua is a traditional Vietnamese sour soup made with fish, pineapple, tomatoes, and various vegetables in a tamarind-flavored broth.
Ingredients - Serves 4
- Garlic - 2 cloves, minced
- Chili peppers - 2, sliced
- Salt - 1 teaspoon
- Sugar - 1 tablespoon
- Fish sauce - 2 tablespoons
- Rice paddy herb - 1/2 cup
- Elephant ear stem - 1 cup, sliced
- Bean sprouts - 1 cup
- Okra - 1 cup
- Tomatoes - 2, quartered
- Pineapple - 1 cup, sliced
- Tamarind paste - 2 tablespoons
- Fish fillets - 500 grams
Let's Get Started
- In a large pot, bring 4 cups of water to a boil.
- Add the tamarind paste and stir until it is fully dissolved.
- Add the fish fillets to the pot and cook until they are fully cooked, about 5-7 minutes. Remove the fish and set aside.
- Add the pineapple, tomatoes, okra, bean sprouts, and elephant ear stem to the pot. Cook for 10 minutes.
- Add the fish sauce, sugar, and salt to the pot and stir to combine.
- Return the fish to the pot and add the rice paddy herb, chili peppers, and garlic. Cook for an additional 5 minutes.
- Serve the soup hot with a side of steamed rice.
