Chankonabe
Chankonabe is a traditional Japanese stew commonly eaten by sumo wrestlers as part of a weight-gain diet. It is a hearty, protein-rich dish with a variety of vegetables.
Ingredients - Serves 4
- Dashi stock - 4 cups
- Sake - 1/4 cup
- Mirin - 1/4 cup
- Soy sauce - 1/4 cup
- Green onions - 4, sliced
- Mushrooms - 200 grams
- Carrots - 2, sliced
- Chinese cabbage - 1/2, cut into chunks
- Tofu - 200 grams
- Chicken thighs - 500 grams
Let's Get Started
- In a large pot, add the chicken thighs and enough water to cover. Bring to a boil and skim off any scum that rises to the top.
- Add the soy sauce, mirin, sake, and dashi stock to the pot. Reduce the heat to low and simmer for 10 minutes.
- Add the tofu, Chinese cabbage, carrots, and mushrooms to the pot. Simmer for another 10 minutes.
- Add the green onions and cook for a further 5 minutes.
- Serve the chankonabe hot, with rice on the side if desired.
