Ingredients - Serves 4

Let's Get Started

  1. In a large pot, add the chicken thighs and enough water to cover. Bring to a boil and skim off any scum that rises to the top.
  2. Add the soy sauce, mirin, sake, and dashi stock to the pot. Reduce the heat to low and simmer for 10 minutes.
  3. Add the tofu, Chinese cabbage, carrots, and mushrooms to the pot. Simmer for another 10 minutes.
  4. Add the green onions and cook for a further 5 minutes.
  5. Serve the chankonabe hot, with rice on the side if desired.
