Let's Get Started

  1. In a large bowl, combine the ground pork, shrimp, carrots, onions, glass noodles, egg, fish sauce, and pepper.
  2. Soak a rice paper wrapper in warm water until soft, then place on a flat surface.
  3. Place a spoonful of the filling in the center of the wrapper, then fold in the sides and roll up tightly.
  4. Repeat with the remaining wrappers and filling.
  5. Heat the vegetable oil in a deep fryer or large pot to 375°F.
  6. Fry the spring rolls in batches until golden brown, about 5 minutes.
  7. Drain on paper towels and serve hot with dipping sauce.
