Cha Gio
Cha Gio, or Vietnamese Fried Spring Rolls, are a popular appetizer or side dish. They're filled with a savory mixture of ground pork, shrimp, and vegetables, then deep-fried until golden and crispy.
Ingredients - Serves 4
- Vegetable oil - For frying
- Rice paper wrappers - 20
- Pepper - 1/2 teaspoon
- Fish sauce - 2 tablespoons
- Egg - 1, beaten
- Glass noodles - 1/2 cup, soaked and chopped
- Onions - 1, finely chopped
- Carrots - 2, grated
- Shrimp - 1/2 pound, peeled, deveined, and chopped
- Ground pork - 1/2 pound
Let's Get Started
- In a large bowl, combine the ground pork, shrimp, carrots, onions, glass noodles, egg, fish sauce, and pepper.
- Soak a rice paper wrapper in warm water until soft, then place on a flat surface.
- Place a spoonful of the filling in the center of the wrapper, then fold in the sides and roll up tightly.
- Repeat with the remaining wrappers and filling.
- Heat the vegetable oil in a deep fryer or large pot to 375°F.
- Fry the spring rolls in batches until golden brown, about 5 minutes.
- Drain on paper towels and serve hot with dipping sauce.
