- Roasted peanuts - 1/4 cup, crushed
- Vermicelli noodles - 8 oz
- Fresh dill - 1/2 cup, chopped

- Garlic - 4 cloves, minced
- Lemongrass - 2 stalks, finely chopped
- Fish sauce - 2 tablespoons
- Turmeric powder - 1 teaspoon
- White fish fillets - 1 lb
Let's Get Started
- Cut the fish fillets into bite-sized pieces.
- In a bowl, mix together turmeric powder, fish sauce, lemongrass, and minced garlic.
- Add the fish pieces to the marinade and let it sit for 15 minutes.
- Heat vegetable oil in a pan over medium heat.
- Add the marinated fish and cook until golden brown and cooked through, about 5-7 minutes.
- Meanwhile, cook the vermicelli noodles according to package instructions.
- Once the fish is cooked, remove it from the pan and set aside.
- In the same pan, add the chopped dill and sauté for 1-2 minutes.
- Divide the cooked vermicelli noodles among serving bowls.
- Top with the cooked fish, sautéed dill, and crushed peanuts.
- Serve hot with lime wedges on the side.
