Ceviche Mixto
A refreshing seafood dish popular in coastal regions of Latin America. This version includes a mix of shrimp, white fish, and squid.
Ingredients - Serves 4
- Salt and pepper - To taste
- Jalapeno - 1, seeded and minced
- Cilantro - 1/2 cup, chopped
- Red onion - 1, thinly sliced
- Orange juice - 1/2 cup
- Lime juice - 1 cup
- Squid - 1/2 pound, cleaned and sliced
- Shrimp - 1/2 pound, peeled and deveined
- White fish - 1 pound, cut into bite-sized pieces
Let's Get Started
- In a large bowl, combine the fish, shrimp, and squid.
- Add the lime juice and orange juice, making sure the seafood is completely covered. Let marinate in the refrigerator for at least 2 hours, or until the seafood is opaque.
- Drain the seafood, reserving some of the marinade.
- Add the red onion, cilantro, jalapeno, salt, and pepper to the seafood. Mix well.
- Add some of the reserved marinade if desired, and adjust the seasoning as needed.
- Serve the ceviche chilled, with tortilla chips or crackers if desired.
