Ceviche de Reineta

Ingredients - Serves 4
- Olive oil - 2 tablespoons
- Black pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon

- Cilantro - 1/4 cup, chopped
- Red onion - 1 small, thinly sliced
- Lime juice - 1 cup
- Reineta fish fillets - 500 grams, fresh and boneless

- Cut the reineta fish fillets into small bite-sized pieces.
- In a bowl, combine the lime juice, red onion, cilantro, garlic, red chili pepper, salt, and black pepper.
- Add the fish pieces to the bowl and mix well to ensure all the fish is coated in the marinade.
- Cover the bowl with plastic wrap and refrigerate for at least 2 hours, allowing the fish to marinate and cook in the lime juice.
- Before serving, drizzle the ceviche with olive oil and garnish with additional cilantro.
