Ceviche de Camarones
A refreshing and tangy seafood dish popular in coastal regions of Latin America. Shrimp are marinated in citrus juices and mixed with onions, tomatoes, and cilantro.
Ingredients - Serves 4
- Avocado - 1, sliced
- Salt and pepper - To taste
- Jalapeno - 1, seeded and finely chopped
- Cilantro - 1/2 cup, chopped
- Tomatoes - 2 medium, diced
- Red onion - 1 medium, finely chopped
- Lemon juice - 1/2 cup
- Lime juice - 1 cup
- Shrimp - 1 pound, peeled and deveined
Let's Get Started
- In a large bowl, combine the shrimp, lime juice, and lemon juice. Let the shrimp marinate in the refrigerator for 15 minutes, or until they turn pink and opaque.
- Drain the shrimp, reserving a small amount of the marinade.
- Add the red onion, tomatoes, cilantro, jalapeno, and reserved marinade to the shrimp. Season with salt and pepper.
- Stir well to combine, then refrigerate for another 15 minutes to let the flavors meld together.
- Serve the ceviche in bowls, garnished with slices of avocado.
