Celery Root and Carrot Soup
This creamy and flavorful soup is made with celery root, carrots, and aromatic spices.
Ingredients - Serves 6
- Fresh parsley - For garnish
- Coconut milk - 1/2 cup
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Cumin - 1/2 teaspoon
- Thyme - 1 teaspoon
- Vegetable broth - 4 cups
- Garlic - 2 cloves, minced
- Onion - 1 medium, chopped
- Carrots - 3 medium, peeled and diced
- Celery root - 1 medium, peeled and diced
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic and cook until the onion is translucent, about 5 minutes.
- Add the celery root, carrots, thyme, cumin, salt, and pepper. Cook for another 5 minutes, stirring occasionally.
- Pour in the vegetable broth and bring to a boil. Reduce the heat and simmer for 20 minutes, or until the vegetables are tender.
- Using an immersion blender or regular blender, puree the soup until smooth and creamy.
- Stir in the coconut milk and heat for another 2-3 minutes.
- Serve hot, garnished with fresh parsley.
