Cebada
Cebada is a refreshing Mexican barley drink. It's a perfect beverage for hot summer days.
Ingredients - Serves 4
- Cinnamon stick - 1
- Vanilla extract - 1 teaspoon
- Lime juice - 1/4 cup
- Sugar - 1/2 cup
- Water - 4 cups
- Pearl barley - 1 cup
Let's Get Started
- Rinse the barley under cold water until the water runs clear.
- In a large pot, combine the barley, water, and cinnamon stick. Bring to a boil.
- Reduce the heat to low, cover, and simmer for about 1 hour, or until the barley is tender.
- Remove from heat and let cool. Remove and discard the cinnamon stick.
- Stir in the sugar, lime juice, and vanilla extract.
- Chill in the refrigerator for at least 2 hours before serving.
- Serve cold, with ice if desired.
