Let's Get Started

  1. Rinse the barley under cold water until the water runs clear.
  2. In a large pot, combine the barley, water, and cinnamon stick. Bring to a boil.
  3. Reduce the heat to low, cover, and simmer for about 1 hour, or until the barley is tender.
  4. Remove from heat and let cool. Remove and discard the cinnamon stick.
  5. Stir in the sugar, lime juice, and vanilla extract.
  6. Chill in the refrigerator for at least 2 hours before serving.
  7. Serve cold, with ice if desired.
