  1. Heat the olive oil in a large pot over medium heat.

  3. In the same pot, add the onions, garlic, carrots, and potatoes. Cook until the vegetables are softened.
  4. Add the paprika, bay leaves, salt, and pepper. Stir to combine.
  5. Return the pork to the pot and add the water. Bring to a boil, then reduce the heat and simmer for 2 hours, or until the pork is tender.
  6. Serve the cazado de cerdo hot, with crusty bread on the side if desired.
