Let's Get Started

  1. Boil the yellow potatoes until tender. Drain and let cool.
  2. Peel the potatoes and mash them with a fork or potato masher.
  3. Add the lime juice, aji amarillo paste, vegetable oil, and salt to the mashed potatoes. Mix well to combine.
  4. Divide the mashed potatoes into two equal portions.
  5. In a separate bowl, mix the shredded chicken with mayonnaise.
  6. Take one portion of the mashed potatoes and spread it evenly on a serving dish.
  7. Layer the sliced avocado on top of the mashed potatoes.
  8. Spread the chicken and mayonnaise mixture on top of the avocado.
  9. Place another layer of mashed potatoes on top of the chicken mixture.
  10. Top with shredded lettuce, sliced hard-boiled eggs, and black olives.
  11. Chill in the refrigerator for at least 1 hour before serving.
  12. Cut into individual portions and serve chilled.
