Causa
Causa is a traditional Peruvian dish made with mashed yellow potatoes and filled with various ingredients.
Ingredients - Serves 6
- Black olives - 1/4 cup, sliced
- Hard-boiled eggs - 2, sliced
- Lettuce - 1 cup, shredded
- Mayonnaise - 1/4 cup
- Chicken breast - 1 cup, cooked and shredded
- Avocado - 1, sliced
- Salt - To taste
- Vegetable oil - 2 tablespoons
- Aji amarillo paste - 2 tablespoons
- Lime juice - 3 tablespoons
- Yellow potatoes - 2 pounds
Let's Get Started
- Boil the yellow potatoes until tender. Drain and let cool.
- Peel the potatoes and mash them with a fork or potato masher.
- Add the lime juice, aji amarillo paste, vegetable oil, and salt to the mashed potatoes. Mix well to combine.
- Divide the mashed potatoes into two equal portions.
- In a separate bowl, mix the shredded chicken with mayonnaise.
- Take one portion of the mashed potatoes and spread it evenly on a serving dish.
- Layer the sliced avocado on top of the mashed potatoes.
- Spread the chicken and mayonnaise mixture on top of the avocado.
- Place another layer of mashed potatoes on top of the chicken mixture.
- Top with shredded lettuce, sliced hard-boiled eggs, and black olives.
- Chill in the refrigerator for at least 1 hour before serving.
- Cut into individual portions and serve chilled.
