Cauliflower Curry
This flavorful cauliflower curry is made with aromatic spices, coconut milk, and fresh vegetables.
Ingredients - Serves 4
- Vegetable oil - 2 tablespoons
- Salt - To taste
- Fresh cilantro - 1/4 cup, chopped
- Green peas - 1 cup
- Tomatoes - 2 medium, diced
- Coconut milk - 1 can (400ml)
- Coriander - 1 teaspoon
- Cumin - 1 teaspoon
- Turmeric - 1 teaspoon
- Curry powder - 2 tablespoons
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Onion - 1 large, chopped
- Cauliflower - 1 medium head, cut into florets
Let's Get Started
- Heat vegetable oil in a large pan over medium heat.
- Add the chopped onion and cook until translucent, about 5 minutes.
- Add the minced garlic and grated ginger, and cook for another 2 minutes.
- Add the curry powder, turmeric, cumin, and coriander. Stir well to coat the onions and spices.
- Add the cauliflower florets and diced tomatoes to the pan. Stir to combine.
- Pour in the coconut milk and bring to a simmer. Cover and cook for 15 minutes, or until the cauliflower is tender.
- Stir in the green peas and cook for an additional 5 minutes.
- Season with salt to taste.
- Garnish with fresh cilantro before serving.
- Serve the cauliflower curry over steamed rice or with naan bread.
