Cauliflower Curry

Ingredients - Serves 4

Let's Get Started

  1. Heat vegetable oil in a large pan over medium heat.
  2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic and grated ginger, and cook for another 2 minutes.
  4. Add the curry powder, turmeric, cumin, and coriander. Stir well to coat the onions and spices.
  5. Add the cauliflower florets and diced tomatoes to the pan. Stir to combine.
  6. Pour in the coconut milk and bring to a simmer. Cover and cook for 15 minutes, or until the cauliflower is tender.
  7. Stir in the green peas and cook for an additional 5 minutes.
  8. Season with salt to taste.
  9. Garnish with fresh cilantro before serving.
  10. Serve the cauliflower curry over steamed rice or with naan bread.
