Cashew Chicken Stir Fry
This delicious cashew chicken stir fry is made with tender chicken, crunchy cashews, and a flavorful sauce.
Ingredients - Serves 4
- Green onions - 2, sliced (for garnish)
- Salt and pepper - To taste
- Vegetable oil - 2 tablespoons
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Hoisin sauce - 2 tablespoons
- Oyster sauce - 2 tablespoons
- Soy sauce - 3 tablespoons
- Broccoli florets - 2 cups
- Bell peppers - 2, sliced
- Cashews - 1 cup
- Chicken breast - 2 boneless, skinless breasts, sliced
Let's Get Started
- In a small bowl, mix together the soy sauce, oyster sauce, and hoisin sauce. Set aside.
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the chicken slices and cook until browned and cooked through, about 5-6 minutes. Remove from the skillet and set aside.
- In the same skillet, add the garlic and ginger. Cook for 1 minute until fragrant.
- Add the bell peppers and broccoli florets. Stir fry for 3-4 minutes until crisp-tender.
- Return the cooked chicken to the skillet and pour in the sauce mixture. Stir well to coat everything evenly.
- Add the cashews and cook for an additional 1-2 minutes until heated through.
- Season with salt and pepper to taste.
- Garnish with sliced green onions before serving.
- Serve hot over steamed rice or noodles.
