Carrot and Potato Soup
This hearty carrot and potato soup is packed with flavor and perfect for a comforting meal.
Ingredients - Serves 6
- Fresh parsley - 2 tablespoons, chopped (for garnish)
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Bay leaf - 1
- Thyme - 1 teaspoon
- Vegetable broth - 4 cups
- Garlic - 2 cloves, minced
- Onion - 1 medium, chopped
- Potatoes - 2 medium, peeled and chopped
- Carrots - 4 large, peeled and chopped
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic and cook until the onion is translucent, about 5 minutes.
- Add the carrots, potatoes, vegetable broth, thyme, bay leaf, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 20 minutes, or until the vegetables are tender.
- Remove the bay leaf from the pot.
- Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches until smooth.
- Return the soup to the pot and heat over low heat until warmed through.
- Serve the soup hot, garnished with fresh parsley.
