  1. Soak the Carne de Sol in cold water for 24 hours, changing the water 3-4 times to remove excess salt.
  2. In a large pot, heat the olive oil over medium heat. Add the garlic, onion, and peppers and sauté until soft.
  3. Add the Carne de Sol to the pot and cook until browned on all sides.
  4. Add the cassava to the pot and cover with water. Season with salt and pepper.
  5. Bring to a boil, then reduce the heat and simmer for about 2 hours, or until the meat and cassava are tender.
  6. Sprinkle with fresh cilantro before serving.
