Carne de Sol Com Mandioca
A traditional Brazilian dish, Carne de Sol com Mandioca is a hearty and flavorful meal made with sun-dried beef and cassava.
Ingredients - Serves 4
- Fresh cilantro - A handful, chopped
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Red bell pepper - 1, chopped
- Green bell pepper - 1, chopped
- Onion - 1 large, chopped
- Garlic - 3 cloves, minced
- Mandioca (cassava) - 1 kg, peeled and cut into chunks
- Carne de sol (sun-dried beef) - 1 kg
Let's Get Started
- Soak the Carne de Sol in cold water for 24 hours, changing the water 3-4 times to remove excess salt.
- In a large pot, heat the olive oil over medium heat. Add the garlic, onion, and peppers and sauté until soft.
- Add the Carne de Sol to the pot and cook until browned on all sides.
- Add the cassava to the pot and cover with water. Season with salt and pepper.
- Bring to a boil, then reduce the heat and simmer for about 2 hours, or until the meat and cassava are tender.
- Sprinkle with fresh cilantro before serving.
