Caribbean Goat Curry
This flavorful Caribbean goat curry is made with tender goat meat, aromatic spices, and coconut milk.
Ingredients - Serves 6
- Fresh cilantro - For garnish
- Salt and pepper - To taste
- Lime juice - 2 tablespoons
- Chicken broth - 1 cup
- Coconut milk - 1 can (14 oz)
- Potatoes - 2, peeled and diced
- Bell pepper - 1, chopped
- Onion - 1 large, chopped
- Ginger - 1 tablespoon, grated
- Garlic - 4 cloves, minced
- Cayenne pepper - 1/2 teaspoon
- Coriander - 1 teaspoon
- Cumin - 1 teaspoon
- Turmeric - 1 teaspoon
- Curry powder - 2 tablespoons
- Goat meat - 2 pounds, cut into cubes
Let's Get Started
- In a large pot, heat some oil over medium heat.
- Add the goat meat and cook until browned on all sides. Remove from the pot and set aside.
- In the same pot, add the chopped onion, bell pepper, garlic, and ginger. Cook until the onion is translucent.
- Add the curry powder, turmeric, cumin, coriander, and cayenne pepper. Stir well to coat the vegetables with the spices.
- Return the goat meat to the pot and stir to combine with the spices and vegetables.
- Add the diced potatoes, coconut milk, and chicken broth. Season with salt and pepper to taste.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 2 hours, or until the goat meat is tender.
- Stir in the lime juice and adjust the seasoning if needed.
- Serve the Caribbean goat curry hot, garnished with fresh cilantro. Enjoy!
