Cappon Magro
Cappon Magro is a traditional Italian dish from Liguria. It's a seafood and vegetable salad layered in a pyramid and coated in a rich green sauce.
Ingredients - Serves 6
- Salt and pepper - To taste
- Extra virgin olive oil - 200ml
- White wine vinegar - 100ml
- Garlic - 2 cloves
- Parsley - 1 bunch
- Capers - 50g
- Olives - 100g
- Hard-boiled eggs - 4, sliced
- Green beans - 200g, boiled and sliced
- Carrots - 2, boiled and sliced
- Potatoes - 2, boiled and sliced
- Mixed seafood - 1 kg
Let's Get Started
- Cook the seafood in boiling water until it's done. Drain and set aside.
- In a blender, combine the parsley, garlic, vinegar, oil, capers, and a pinch of salt and pepper. Blend until smooth.
- In a large dish, start layering the ingredients. Start with a layer of potatoes, then a layer of carrots, then green beans, then seafood, then eggs. Repeat until all the ingredients are used up.
- Pour the green sauce over the top of the pyramid, making sure to cover it completely.
- Decorate the top with olives and extra capers.
- Let the dish rest in the fridge for a few hours before serving.
