  1. Heat oil in a large pot over medium heat. Add onions, garlic, and ginger and cook until onions are soft.
  2. Add curry powder, turmeric, cinnamon stick, and cardamom pods. Cook for a few minutes until fragrant.
  3. Add chicken pieces to the pot and brown on all sides.
  4. Add tomatoes, potatoes, chicken stock, salt, and pepper. Bring to a boil, then reduce heat and simmer for 40-50 minutes, until chicken is cooked through and potatoes are tender.
  5. Serve hot with rice or naan bread.
