Cape Malay Chicken Curry
A traditional South African dish, Cape Malay Chicken Curry is a flavorful blend of spices, chicken, and vegetables.
Ingredients - Serves 4
- Salt and pepper - To taste
- Chicken stock - 2 cups
- Potatoes - 2, cubed
- Tomatoes - 2, chopped
- Cardamom pods - 4
- Cinnamon stick - 1
- Turmeric - 1 teaspoon
- Curry powder - 2 tablespoons
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Onions - 2, finely chopped
- Chicken - 1 kg, cut into pieces
Let's Get Started
- Heat oil in a large pot over medium heat. Add onions, garlic, and ginger and cook until onions are soft.
- Add curry powder, turmeric, cinnamon stick, and cardamom pods. Cook for a few minutes until fragrant.
- Add chicken pieces to the pot and brown on all sides.
- Add tomatoes, potatoes, chicken stock, salt, and pepper. Bring to a boil, then reduce heat and simmer for 40-50 minutes, until chicken is cooked through and potatoes are tender.
- Serve hot with rice or naan bread.
