Cape Cod Fish & Chips

- Potatoes - 4 large, cut into fries
- Vegetable oil - For frying

- Panko breadcrumbs - 2 cups
- Eggs - 2, beaten
- All-purpose flour - 1 cup
- Cod fillets - 4, about 6 ounces each
