Essex Fried Oysters

- Tartar sauce - For serving
- Lemon wedges - For serving
- Vegetable oil - For frying
- Cayenne pepper - 1/4 teaspoon
- Black pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Cornmeal - 1 cup
- All-purpose flour - 1 cup
- Buttermilk - 1 cup
- Oysters - 24, shucked
Let's Get Started
- Place the oysters in a bowl and cover with buttermilk. Let soak for 15 minutes.
- In another bowl, combine the flour, cornmeal, salt, black pepper, and cayenne pepper.
- Heat the vegetable oil in a deep fryer or large pot to 375°F.
- Drain the oysters and dredge in the flour mixture, shaking off any excess.
- Fry the oysters in batches until golden brown, about 2-3 minutes.
- Drain on paper towels and serve with lemon wedges and tartar sauce.
