Cannery Row Chicken
A delicious and hearty chicken dish inspired by the flavors of Cannery Row. This recipe features chicken breasts cooked in a savory sauce with mushrooms and onions.
Ingredients - Serves 4
- Parsley - 1 tablespoon, chopped
- Thyme - 1 teaspoon, dried
- Chicken broth - 1 cup
- White wine - 1/2 cup
- Mushrooms - 1 cup, sliced
- Garlic - 2 cloves, minced
- Onions - 1 large, sliced
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Chicken breasts - 4, boneless and skinless
Let's Get Started
- Season the chicken breasts with salt and pepper.
- Heat the olive oil in a large skillet over medium heat. Add the chicken and cook until browned on both sides. Remove the chicken from the skillet and set aside.
- In the same skillet, add the onions, garlic, and mushrooms. Cook until the onions are soft and the mushrooms are browned.
- Add the wine to the skillet and scrape the bottom to loosen any browned bits. Add the chicken broth and thyme and bring to a simmer.
- Return the chicken to the skillet, cover, and simmer for 15 minutes, or until the chicken is cooked through.
- Sprinkle with chopped parsley before serving.
