  1. Season the chicken breasts with salt and pepper.
  2. Heat the olive oil in a large skillet over medium heat. Add the chicken and cook until browned on both sides. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the onions, garlic, and mushrooms. Cook until the onions are soft and the mushrooms are browned.
  4. Add the wine to the skillet and scrape the bottom to loosen any browned bits. Add the chicken broth and thyme and bring to a simmer.
  5. Return the chicken to the skillet, cover, and simmer for 15 minutes, or until the chicken is cooked through.
  6. Sprinkle with chopped parsley before serving.
