Canestrelli
Canestrelli is a traditional Italian shortbread cookie, usually served with a dusting of powdered sugar.
Ingredients - Serves 24
- Powdered sugar for dusting - 1/2 cup
- Salt - 1/4 teaspoon
- Lemon zest - 1 teaspoon
- Vanilla extract - 1 teaspoon
- Egg yolks - 2
- Unsalted butter - 1 cup, softened
- Powdered sugar - 1 cup
- All-purpose flour - 2 cups
Let's Get Started
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a large bowl, combine the flour, powdered sugar, and salt.
- Add the softened butter, egg yolks, vanilla extract, and lemon zest. Mix until a dough forms.
- Roll out the dough on a lightly floured surface to about 1/2 inch thickness.
- Use a cookie cutter to cut out the cookies and place them on the prepared baking sheet.
- Bake for 15 minutes, or until the edges are lightly golden.
- Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- Once the cookies are cool, dust with the additional powdered sugar.
