Cameroonian Curry
This flavorful Cameroonian curry is made with a blend of spices, vegetables, and protein of your choice.
Ingredients - Serves 4
- Fresh cilantro - For garnish
- Salt - To taste
- Protein (e.g., chicken, beef, tofu) - 2 cups, cooked and cubed
- Vegetables - 2 cups, chopped (e.g., bell peppers, carrots, potatoes)
- Coconut milk - 1 can (400ml)
- Tomatoes - 2 large, diced
- Cayenne pepper - 1/2 teaspoon
- Paprika - 1 teaspoon
- Curry powder - 2 tablespoons
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Onion - 1 large, chopped
- Vegetable oil - 2 tablespoons
Let's Get Started
- Heat the vegetable oil in a large pan over medium heat.
- Add the chopped onion and cook until translucent, about 5 minutes.
- Add the minced garlic and grated ginger, and cook for another 2 minutes.
- Stir in the curry powder, paprika, and cayenne pepper, and cook for 1 minute to toast the spices.
- Add the diced tomatoes and cook for 5 minutes, until they start to soften.
- Pour in the coconut milk and stir well to combine.
- Add the chopped vegetables and cooked protein of your choice.
- Cover the pan and simmer for 20-25 minutes, or until the vegetables are tender and the flavors have melded together.
- Season with salt to taste.
