Let's Get Started

  1. Preheat the oven to 180°C (350°F).
  2. Cut a lid off the top of the pumpkin and remove the seeds and fibers from inside.
  3. Place the pumpkin on a baking sheet and bake for about 50 minutes, or until it is soft.
  4. While the pumpkin is baking, heat the olive oil in a large pan over medium heat.
  5. Add the onion and garlic and cook until they are soft.
  6. Add the shrimp, tomatoes, salt, and pepper and cook for about 5 minutes.
  7. Add the coconut milk and cream cheese and stir until the cheese is melted and the sauce is creamy.
  8. Fill the baked pumpkin with the shrimp mixture.
  9. Return the pumpkin to the oven and bake for another 30 minutes.
  10. Garnish with chopped parsley before serving.
