Caldo Gallego
Caldo Gallego is a traditional Spanish soup made with white beans, potatoes, greens, and cured pork.
Ingredients - Serves 6
- Water - 2 cups
- Chicken broth - 4 cups
- Salt and pepper - To taste
- Paprika - 1 teaspoon
- Garlic - 3 cloves, minced
- Onion - 1 medium, chopped
- Cured pork (chorizo or bacon) - 4 ounces, diced
- Greens (kale, collard greens, or turnip greens) - 1 bunch, chopped
- Potatoes - 2 medium, peeled and diced
- White beans - 1 cup, soaked overnight
Let's Get Started
- In a large pot, heat some olive oil over medium heat.
- Add the diced cured pork and cook until crispy.
- Add the chopped onion and minced garlic. Cook until the onion is translucent.
- Add the soaked white beans, diced potatoes, and paprika. Stir well to combine.
- Pour in the chicken broth and water. Bring to a boil, then reduce the heat and simmer for 45 minutes, or until the beans and potatoes are tender.
- Add the chopped greens and cook for an additional 10 minutes, until wilted.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
