Cajun Seafood Gumbo

Ingredients - Serves 8

Let's Get Started

  1. In a large pot over medium heat, combine the oil and flour to create a roux. Stir continuously for about 15 minutes, or until the roux becomes a dark brown color.
  2. Add the onions, bell peppers, celery, and garlic to the pot. Cook for 10 minutes, or until the vegetables are softened.
  3. Stir in the Andouille sausage, chicken broth, Cajun seasoning, bay leaves, and thyme. Bring the mixture to a boil, then reduce the heat and simmer for 1 hour.
  4. Add the crabmeat, shrimp, and oysters to the pot. Season with salt and pepper. Simmer for an additional 10 minutes, or until the seafood is cooked through.
  5. Stir in the green onions, parsley, and file powder. Cook for an additional 5 minutes.
  6. Serve the gumbo hot with a side of rice.
