Cajun Seafood Gumbo
A hearty, spicy, Cajun-style gumbo packed with shrimp, oysters, crab and Andouille sausage.
Ingredients - Serves 8
- File powder - 2 teaspoons
- Parsley - 1/2 cup, chopped
- Green onions - 1/2 cup, chopped
- Salt and pepper - To taste
- Oysters - 1 pint, shucked
- Shrimp - 1 pound, peeled and deveined
- Crabmeat - 1 pound
- Thyme - 1 teaspoon, dried
- Bay leaves - 2
- Cajun seasoning - 2 tablespoons
- Chicken broth - 8 cups
- Andouille sausage - 1 pound, sliced
- Garlic cloves - 4, minced
- Celery stalks - 2, chopped
- Bell peppers - 2, chopped
- Onions - 2, chopped
- All-purpose flour - 1/2 cup
- Vegetable oil - 1/2 cup
Let's Get Started
- In a large pot over medium heat, combine the oil and flour to create a roux. Stir continuously for about 15 minutes, or until the roux becomes a dark brown color.
- Add the onions, bell peppers, celery, and garlic to the pot. Cook for 10 minutes, or until the vegetables are softened.
- Stir in the Andouille sausage, chicken broth, Cajun seasoning, bay leaves, and thyme. Bring the mixture to a boil, then reduce the heat and simmer for 1 hour.
- Add the crabmeat, shrimp, and oysters to the pot. Season with salt and pepper. Simmer for an additional 10 minutes, or until the seafood is cooked through.
- Stir in the green onions, parsley, and file powder. Cook for an additional 5 minutes.
- Serve the gumbo hot with a side of rice.
