Cajun Pasta
This Cajun pasta is a spicy and flavorful dish made with penne pasta, Cajun seasoning, bell peppers, onions, andouille sausage, and a creamy sauce.
Ingredients - Serves 4
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Green onions - 2, chopped
- Parmesan cheese - 1/2 cup, grated
- Chicken broth - 1/2 cup
- Heavy cream - 1 cup
- Cajun seasoning - 2 tablespoons
- Garlic - 3 cloves, minced
- Onion - 1, thinly sliced
- Bell peppers - 2, thinly sliced
- Andouille sausage - 12 ounces, sliced
- Penne pasta - 8 ounces
Let's Get Started
- Cook the penne pasta according to package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat.
- Add the sliced sausage and cook until browned, about 5 minutes.
- Add the bell peppers, onion, and garlic. Cook until the vegetables are tender, about 5 minutes.
- Sprinkle the Cajun seasoning over the sausage and vegetables. Stir to coat evenly.
- Pour in the heavy cream and chicken broth. Bring to a simmer and cook for 5 minutes, until the sauce thickens slightly.
- Add the cooked penne pasta to the skillet and toss to coat in the sauce.
- Stir in the grated Parmesan cheese and chopped green onions.
- Season with salt and pepper to taste.
