Cajun Mac and Cheese
This spicy and creamy Cajun mac and cheese is made with a blend of cheeses, pasta, and Cajun spices.
Ingredients - Serves 6
- Breadcrumbs - 1/2 cup
- Green onions - 2, chopped
- Salt and pepper - To taste
- Cajun seasoning - 2 teaspoons
- Monterey jack cheese - 1 cup, shredded
- Cheddar cheese - 1 cup, shredded
- Milk - 2 cups
- All-purpose flour - 2 tablespoons
- Butter - 2 tablespoons
- Macaroni - 2 cups
Let's Get Started
- Preheat the oven to 350°F.
- Cook the macaroni according to the package instructions, then drain and set aside.
- In a large pot, melt the butter over medium heat. Add the flour and stir until smooth.
- Gradually whisk in the milk, then bring to a boil. Reduce the heat and simmer, stirring constantly, until the sauce thickens.
- Remove the pot from the heat and stir in the cheeses, Cajun seasoning, salt, and pepper until the cheeses are melted and the sauce is smooth.
- Add the cooked macaroni and green onions to the pot and stir until well coated with the cheese sauce.
- Transfer the macaroni and cheese to a baking dish and sprinkle with the breadcrumbs.
- Bake for 15-20 minutes, or until the breadcrumbs are golden and the macaroni and cheese is bubbly.
