Cabbage and Sausage Soup
This hearty cabbage and sausage soup is packed with flavor and perfect for a comforting meal.
Ingredients - Serves 6
- Salt and pepper - To taste
- Bay leaf - 1
- Dried thyme - 1 teaspoon
- Tomato paste - 2 tablespoons
- Chicken broth - 6 cups
- Potatoes - 2 medium, diced
- Carrots - 2 medium, sliced
- Cabbage - 1 small head, shredded
- Garlic - 3 cloves, minced
- Onion - 1 medium, chopped
- Sausage - 1 pound, sliced
Let's Get Started
- In a large pot, cook the sausage over medium heat until browned. Remove from the pot and set aside.
- In the same pot, add the chopped onion and minced garlic. Cook until the onion is translucent.
- Add the shredded cabbage, sliced carrots, and diced potatoes to the pot. Cook for 5 minutes, stirring occasionally.
- Pour in the chicken broth and add the tomato paste, dried thyme, bay leaf, salt, and pepper. Stir well to combine.
- Bring the soup to a boil, then reduce the heat and simmer for 20 minutes, or until the vegetables are tender.
- Add the cooked sausage back to the pot and simmer for an additional 5 minutes to heat through.
- Remove the bay leaf before serving.
- Serve hot and enjoy!
