Cabbage and Sausage Soup

Ingredients - Serves 6

Let's Get Started

  1. In a large pot, cook the sausage over medium heat until browned. Remove from the pot and set aside.
  2. In the same pot, add the chopped onion and minced garlic. Cook until the onion is translucent.
  3. Add the shredded cabbage, sliced carrots, and diced potatoes to the pot. Cook for 5 minutes, stirring occasionally.
  4. Pour in the chicken broth and add the tomato paste, dried thyme, bay leaf, salt, and pepper. Stir well to combine.
  5. Bring the soup to a boil, then reduce the heat and simmer for 20 minutes, or until the vegetables are tender.
  6. Add the cooked sausage back to the pot and simmer for an additional 5 minutes to heat through.
  7. Remove the bay leaf before serving.
  8. Serve hot and enjoy!
