Cabbage and Potato Soup
This hearty cabbage and potato soup is packed with flavor and perfect for a comforting meal.
Ingredients - Serves 6
- Fresh parsley - 2 tablespoons, chopped
- Salt and pepper - To taste
- Thyme - 1 teaspoon
- Bay leaf - 1
- Vegetable broth - 6 cups
- Carrots - 2 medium, diced
- Cabbage - 1 small head, shredded
- Potatoes - 4 medium, peeled and diced
- Garlic - 3 cloves, minced
- Onion - 1 medium, chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic, and cook until the onion is translucent, about 5 minutes.
- Add the potatoes, cabbage, carrots, vegetable broth, bay leaf, thyme, salt, and pepper. Bring to a boil.
- Reduce the heat and simmer for 20 minutes, or until the potatoes are tender.
- Remove the bay leaf and discard.
- Using an immersion blender, blend the soup until desired consistency is reached. Alternatively, transfer half of the soup to a blender and blend until smooth, then return to the pot.
- Simmer for an additional 5 minutes to allow the flavors to meld.
- Serve hot, garnished with fresh parsley.
