Cabbage and Pork Noodle Soup

  1. In a large pot, heat some oil over medium heat. Add the pork slices and cook until browned. Remove from the pot and set aside.
  2. In the same pot, add the onion, garlic, and ginger. Cook until fragrant and the onion is translucent.
  3. Add the cabbage and carrots to the pot and cook until slightly softened.
  4. Pour in the chicken broth, soy sauce, and fish sauce. Bring to a boil.
  5. Reduce the heat to low and simmer for 20 minutes to allow the flavors to meld together.
  6. Meanwhile, cook the rice noodles according to the package instructions. Drain and set aside.
  7. Return the cooked pork slices to the pot and simmer for an additional 5 minutes.
  8. To serve, divide the cooked rice noodles among bowls. Ladle the soup over the noodles.
  9. Garnish with chopped green onions and cilantro. Serve with lime wedges on the side.
