Cabbage and Pork Noodle Soup

Ingredients - Serves 6
- Lime - 1, cut into wedges
- Cilantro - 1/4 cup, chopped
- Green onions - 2, chopped
- Rice noodles - 8 ounces
- Chicken broth - 6 cups
- Fish sauce - 1 tablespoon
- Soy sauce - 2 tablespoons
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Onion - 1, diced
- Carrots - 2, thinly sliced
- Cabbage - 1/2 head, shredded
- Pork shoulder - 1 pound, thinly sliced
Let's Get Started
- In a large pot, heat some oil over medium heat. Add the pork slices and cook until browned. Remove from the pot and set aside.
- In the same pot, add the onion, garlic, and ginger. Cook until fragrant and the onion is translucent.
- Add the cabbage and carrots to the pot and cook until slightly softened.
- Pour in the chicken broth, soy sauce, and fish sauce. Bring to a boil.
- Reduce the heat to low and simmer for 20 minutes to allow the flavors to meld together.
- Meanwhile, cook the rice noodles according to the package instructions. Drain and set aside.
- Return the cooked pork slices to the pot and simmer for an additional 5 minutes.
- To serve, divide the cooked rice noodles among bowls. Ladle the soup over the noodles.
- Garnish with chopped green onions and cilantro. Serve with lime wedges on the side.
