Cabbage and Chickpea Curry
A hearty and healthy curry dish made with cabbage and chickpeas, perfect for a comforting dinner.
Ingredients - Serves 4
- Fresh cilantro - For garnish
- Salt and pepper - To taste
- Coconut milk - 1 can
- Chickpeas - 1 can, drained and rinsed
- Cabbage - 1/2, chopped
- Curry powder - 2 tablespoons
- Ginger - 1 tablespoon, grated
- Garlic - 2 cloves, minced
- Onion - 1, finely chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion, garlic, and ginger and cook until the onion is soft, about 5 minutes.
- Add the curry powder and cook for another minute.
- Add the cabbage and chickpeas and stir to coat in the curry mixture.
- Add the coconut milk and bring to a simmer. Cover and cook for 20 minutes, or until the cabbage is tender.
- Season with salt and pepper to taste.
- Serve the curry hot, garnished with fresh cilantro.
