Cabbage, Spinach, and Cheese Casserole

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent.
  3. Add the shredded cabbage and chopped spinach to the skillet. Cook until the cabbage is wilted and the spinach is cooked down, about 5 minutes. Season with salt, black pepper, and nutmeg.
  4. In a separate bowl, whisk together the eggs and milk. Add the cheddar cheese and Parmesan cheese, and mix well.
  5. Grease a casserole dish and spread the cabbage and spinach mixture evenly in the dish.
  6. Pour the egg and cheese mixture over the vegetables in the casserole dish.
