Let's Get Started

  1. Preheat the grill to medium heat.
  2. Pierce the eggplants with a fork and grill them until the skin is charred and the inside is tender, about 10-15 minutes. Let them cool, then peel and discard the skin.
  3. While the eggplants are grilling, heat the vegetable oil in a pan over medium heat. Add the scallions and cook until they are wilted and fragrant, about 2-3 minutes. Remove from heat.
  4. In a small bowl, mix together the soy sauce, sugar, vinegar, garlic, and chili pepper to make the sauce.
  5. Place the grilled eggplants on a plate, drizzle with the scallion oil and the sauce, and serve.
