Ca Tim Nuong Mo Hanh

Ingredients - Serves 4
- Red chili pepper - 1, finely chopped
- Garlic - 2 cloves, minced
- Vinegar - 1 tablespoon
- Sugar - 1 tablespoon
- Soy sauce - 2 tablespoons
- Vegetable oil - 3 tablespoons
- Scallions - 1 bunch, finely chopped
- Eggplants - 2 large
Let's Get Started
- Preheat the grill to medium heat.
- Pierce the eggplants with a fork and grill them until the skin is charred and the inside is tender, about 10-15 minutes. Let them cool, then peel and discard the skin.
- While the eggplants are grilling, heat the vegetable oil in a pan over medium heat. Add the scallions and cook until they are wilted and fragrant, about 2-3 minutes. Remove from heat.
- In a small bowl, mix together the soy sauce, sugar, vinegar, garlic, and chili pepper to make the sauce.
- Place the grilled eggplants on a plate, drizzle with the scallion oil and the sauce, and serve.
