Butternut Squash Ravioli with Sage Butter

Ingredients - Serves 4

Let's Get Started

  1. Preheat the oven to 400°F. Toss the butternut squash with the olive oil, salt, and pepper and roast for 30 minutes, or until soft.
  2. Mash the roasted squash and mix with the Parmesan cheese. This will be the filling for the ravioli.
  3. Roll out the ravioli dough and cut into squares. Place a spoonful of the squash filling in the center of each square and fold over to form a triangle. Press the edges to seal.
  4. Boil the ravioli in salted water for 3-4 minutes, or until they float to the top.
  5. While the ravioli are cooking, melt the butter in a skillet over medium heat. Add the sage leaves and cook until the butter is browned.
  6. Drain the ravioli and toss with the sage butter. Serve immediately.
