Butternut Squash Ravioli with Sage Butter
This is a delicious recipe for homemade butternut squash ravioli served with a sage butter sauce.
Ingredients - Serves 4
- Sage leaves - 10
- Butter - 1/2 cup
- Parmesan cheese - 1 cup, grated
- Ravioli dough - 1 batch
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Butternut squash - 1 medium, peeled and cubed
Let's Get Started
- Preheat the oven to 400°F. Toss the butternut squash with the olive oil, salt, and pepper and roast for 30 minutes, or until soft.
- Mash the roasted squash and mix with the Parmesan cheese. This will be the filling for the ravioli.
- Roll out the ravioli dough and cut into squares. Place a spoonful of the squash filling in the center of each square and fold over to form a triangle. Press the edges to seal.
- Boil the ravioli in salted water for 3-4 minutes, or until they float to the top.
- While the ravioli are cooking, melt the butter in a skillet over medium heat. Add the sage leaves and cook until the butter is browned.
- Drain the ravioli and toss with the sage butter. Serve immediately.
