Butter Poached Lobster

- Lemon - 1, juiced
- Water - 1/4 cup
- Unsalted butter - 1 cup, cut into pieces
- Lobster tails - 2, fresh or frozen

- If using frozen lobster tails, thaw them in the refrigerator overnight.
- In a large pot, bring the water to a simmer over medium heat.
- Add the butter, one piece at a time, stirring until it melts before adding the next piece.
- Once all the butter has melted, add the lobster tails. Cook for about 7-8 minutes, or until the lobster is cooked through and opaque.
