Burritos
These delicious chicken burritos are filled with seasoned chicken, rice, beans, and cheese.
Ingredients - Serves 4
- Cilantro - 1/4 cup, chopped
- Avocado - 1, sliced
- Tomatoes - 1, diced
- Lettuce - 1 cup, shredded
- Salsa - 1/2 cup
- Sour cream - 1/2 cup
- Shredded cheese - 1 cup
- Tortillas - 4, large
- Canned black beans - 1 cup, drained and rinsed
- Cooked rice - 1 cup
- Taco seasoning - 2 tablespoons
- Chicken breasts - 2, boneless and skinless
Let's Get Started
- Preheat the oven to 375°F.
- Season the chicken breasts with taco seasoning on both sides.
- Heat a skillet over medium heat and cook the chicken breasts for 6-8 minutes per side, or until cooked through.
- Remove the chicken from the skillet and let it rest for a few minutes. Then, slice it into thin strips.
- Warm the tortillas in the oven for a few minutes.
- Place a tortilla on a flat surface and spread a spoonful of cooked rice in the center.
- Add a spoonful of black beans, a few slices of chicken, and a sprinkle of shredded cheese.
- Fold the sides of the tortilla over the filling, then roll it up tightly.
- Repeat with the remaining tortillas and filling.
- Place the burritos on a baking sheet and bake for 10-12 minutes, or until the cheese is melted and the tortillas are crispy.
- Serve the burritos with sour cream, salsa, shredded lettuce, diced tomatoes, sliced avocado, and chopped cilantro.
