Burnt Ends
Burnt ends are flavorful pieces of meat cut from the 'point' half of a smoked brisket. A Kansas City barbecue tradition, this dish is a crowd favorite.
Ingredients - Serves 6
- Butter - 1/4 cup
- Honey - 1/4 cup
- Brown sugar - 1/2 cup
- Bbq sauce - 2 cups
- Bbq rub - 1 cup
- Beef brisket - 1 whole (about 12 pounds)
Let's Get Started
- Preheat your smoker to 225°F and prepare it for indirect cooking.
- Trim the excess fat off the brisket and apply a generous amount of BBQ rub.
- Place the brisket on the smoker, fat side up, and smoke until the internal temperature reaches 165°F.
- Wrap the brisket in aluminum foil and continue to cook until the internal temperature reaches 195°F.
- Remove the brisket from the smoker and let it rest for 30 minutes.
- Cut the point half of the brisket into 1-inch cubes.
- Place the cubes in a foil pan and toss with the BBQ sauce, brown sugar, honey, and butter.
- Return the pan to the smoker and cook for another 2 hours, or until the sauce is caramelized.
- Serve the burnt ends hot with extra BBQ sauce on the side.
