Buridda
Buridda is a traditional Italian fish stew, originating from Liguria. It's a hearty dish, filled with a variety of seafood, potatoes, and tomatoes.
Ingredients - Serves 4
- Parsley - For garnish
- Salt and pepper - To taste
- Mixed seafood - 1 kg
- White wine - 1 cup
- Fish stock - 4 cups
- Potatoes - 2, peeled and diced
- Tomatoes - 4, chopped
- Garlic - 2 cloves, minced
- Onions - 2, finely chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onions and garlic and cook until the onions are soft and translucent, about 5 minutes.
- Add the tomatoes and potatoes and cook for another 5 minutes.
- Pour in the fish stock and white wine. Bring to a boil, then reduce the heat and simmer for 20 minutes.
- Add the mixed seafood to the pot. Cover and cook for 20 minutes, or until the seafood is cooked through.
- Season with salt and pepper to taste.
- Serve the buridda hot, garnished with parsley.
