Bun Rieu
Bun Rieu is a popular Vietnamese noodle soup made with crab and tomato broth, served with vermicelli noodles, tofu, and various toppings.
Ingredients - Serves 4
- Chili peppers - To taste, sliced
- Fresh herbs (cilantro, mint, basil) - For garnish
- Lime - 1, cut into wedges
- Bean sprouts - 1 cup
- Vermicelli noodles - 8 ounces, cooked
- Shrimp paste - 1 tablespoon
- Lemongrass - 1 stalk, bruised
- Crab paste - 2 tablespoons
- Fish sauce - 2 tablespoons
- Tofu - 1/2 cup, diced
- Tomatoes - 2, chopped
- Pork bones - 1 pound
- Shrimp - 1/2 cup, peeled and deveined
- Crab meat - 1 cup
Let's Get Started
- In a large pot, add the pork bones and cover with water. Bring to a boil and simmer for 30 minutes to make the broth.
- Remove the pork bones from the broth and set aside. Add the crab meat, shrimp, tomatoes, tofu, fish sauce, crab paste, lemongrass, and shrimp paste to the broth. Simmer for another 15 minutes.
- While the broth is simmering, prepare the toppings by blanching the bean sprouts in boiling water for 1 minute. Drain and set aside.
- Cook the vermicelli noodles according to package instructions. Drain and set aside.
- To serve, divide the cooked vermicelli noodles among bowls. Ladle the hot broth with crab and tomato over the noodles. Top with blanched bean sprouts, fresh herbs, and sliced chili peppers. Serve with lime wedges on the side.
