Bun Moc
Bun Moc is a traditional Vietnamese noodle soup made with pork and mushrooms.
Ingredients - Serves 4
- Chili peppers - 2, sliced
- Fresh herbs (cilantro, mint, thai basil) - 1 cup, chopped
- Lime - 1, cut into wedges
- Bean sprouts - 2 cups
- Rice vermicelli noodles - 400g, cooked
- Pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Fish sauce - 3 tablespoons
- Garlic - 4 cloves, minced
- Onion - 1, chopped
- Dried shiitake mushrooms - 10 pieces
- Pork shoulder - 500g, thinly sliced
- Pork bones - 1 kg
Let's Get Started
- In a large pot, add the pork bones, pork shoulder, dried shiitake mushrooms, onion, garlic, fish sauce, salt, and pepper.
- Cover with water and bring to a boil. Reduce heat and simmer for 1 hour, skimming off any impurities that rise to the surface.
- Remove the pork bones and mushrooms from the pot. Discard the bones and slice the mushrooms.
- Return the sliced mushrooms to the pot and continue simmering for another 30 minutes.
- Meanwhile, prepare the rice vermicelli noodles according to package instructions.
- To serve, divide the cooked noodles among bowls. Top with the pork slices, bean sprouts, and fresh herbs.
- Ladle the hot broth over the noodles and garnish with lime wedges and sliced chili peppers.
- Serve hot and enjoy!
