  1. Soak the vermicelli noodles in hot water for 10 minutes, then drain and set aside.
  2. In a bowl, combine the ground pork, shrimp, carrot, mushrooms, onion, fish sauce, sugar, salt, and pepper. Mix well.
  3. Place a spoonful of the filling in the center of each spring roll wrapper. Fold in the sides and roll tightly.
  4. Heat the vegetable oil in a deep fryer or large pot. Fry the spring rolls until golden brown and crispy.
  5. Serve the vermicelli noodles with the fried spring rolls, fresh herbs, and Nuoc Cham on the side.
