Bulgur Wheat Salad with Orange and Carrots
A refreshing and nutritious salad, perfect for a light lunch or side dish.
Ingredients - Serves 4
- Fresh parsley - 1/4 cup, chopped
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Orange - 1, juiced and zested
- Carrots - 2, grated
- Water - 2 cups
- Bulgur wheat - 1 cup
Let's Get Started
- In a medium saucepan, bring the water to a boil. Add the bulgur wheat, cover, and reduce heat to low. Simmer for 15-20 minutes, or until the water is absorbed and the bulgur is tender.
- While the bulgur is cooking, grate the carrots and zest and juice the orange.
- In a large bowl, combine the cooked bulgur, grated carrots, orange juice and zest, olive oil, salt, and pepper. Stir well to combine.
- Chill the salad in the refrigerator for at least 30 minutes before serving.
- Just before serving, stir in the chopped parsley.
