Bulgur Wheat Salad with Orange and Carrots

Ingredients - Serves 4

Let's Get Started

  1. In a medium saucepan, bring the water to a boil. Add the bulgur wheat, cover, and reduce heat to low. Simmer for 15-20 minutes, or until the water is absorbed and the bulgur is tender.
  2. While the bulgur is cooking, grate the carrots and zest and juice the orange.
  3. In a large bowl, combine the cooked bulgur, grated carrots, orange juice and zest, olive oil, salt, and pepper. Stir well to combine.
  4. Chill the salad in the refrigerator for at least 30 minutes before serving.
  5. Just before serving, stir in the chopped parsley.
