Buko Pie
Buko Pie is a traditional Filipino dessert made with young coconut meat and a sweet custard filling.
Ingredients - Serves 8
- Sugar - 1/2 cup
- Butter - 2 tablespoons
- Egg yolks - 3
- Vanilla extract - 1 teaspoon
- Cornstarch - 2 tablespoons
- Condensed milk - 1 cup
- Evaporated milk - 1 cup
- Young coconut meat - 2 cups, shredded
- Pie crust - 2 cups
Let's Get Started
- Preheat the oven to 350°F.
- In a saucepan, combine the shredded young coconut meat, evaporated milk, condensed milk, cornstarch, and vanilla extract. Cook over medium heat until thickened, stirring constantly.
- Remove the saucepan from heat and let the mixture cool slightly.
- In a separate bowl, beat the egg yolks. Gradually add the cooled coconut mixture to the beaten egg yolks, stirring constantly.
- Pour the mixture into the pie crust.
- Bake for 30-35 minutes, or until the crust is golden brown and the filling is set.
- In a small saucepan, melt the butter and sugar together to make a caramel sauce.
- Pour the caramel sauce over the baked pie, spreading it evenly.
- Let the pie cool before serving. Enjoy!
