Buddha's Delight
Buddha's Delight is a traditional Chinese dish full of mixed vegetables and tofu, often served during Chinese New Year. It's a light, healthy and flavorful dish.
Ingredients - Serves 4
- Water - 1/4 cup
- Cornstarch - 1 tablespoon
- Sesame oil - 1 tablespoon
- Soy sauce - 2 tablespoons
- Firm tofu - 1 cup, cubed
- Mixed vegetables - 4 cups (such as broccoli, bell peppers, carrots, bok choy)
- Ginger - 1 tablespoon, minced
- Garlic - 2 cloves, minced
- Vegetable oil - 2 tablespoons
Let's Get Started
- Heat the vegetable oil in a large wok or skillet over medium heat.
- Add the garlic and ginger and cook until fragrant, about 1 minute.
- Add the mixed vegetables and tofu and stir-fry for about 5 minutes, until the vegetables are tender.
- In a small bowl, whisk together the soy sauce, sesame oil, cornstarch, and water.
- Pour the sauce over the vegetables and tofu and stir well to combine.
- Continue cooking for another 2-3 minutes, until the sauce has thickened.
- Serve the Buddha's Delight hot, over rice if desired.
