Ingredients - Serves 4

Let's Get Started

  1. Heat the vegetable oil in a large wok or skillet over medium heat.
  2. Add the garlic and ginger and cook until fragrant, about 1 minute.
  3. Add the mixed vegetables and tofu and stir-fry for about 5 minutes, until the vegetables are tender.
  4. In a small bowl, whisk together the soy sauce, sesame oil, cornstarch, and water.
  5. Pour the sauce over the vegetables and tofu and stir well to combine.
  6. Continue cooking for another 2-3 minutes, until the sauce has thickened.
  7. Serve the Buddha's Delight hot, over rice if desired.
